3 cups diced potatoes

1/4 c olive oil

celery stalks chopped

onions, chopped

1/4 cup red wine vinegar

2 tablespoons water

1 teaspoon sugar

1 teaspoon salt

1 tablespoon prepared mustard

Adobo seasoning

chopped fresh parsley or scallions optional
