Soaking dried beans overnight to simmer the following morning is my favorite method. Home cooked beans can be terrible if the dried beans are too old or expired. Be careful where you purchase them. Old beans are starchy no matter how long they are cooked. This happened to me today so I decided to puree them in my blender which saved them.
