Kalamata Olive Bread

I buy Kalamata olives by the vat from my chef pal Gary McLaughlin. When the moment arises I make olive bread using the recipe from THE BOOK OF BREAD by Judith and Evan Jones. The secret ingredient is mint! I love to make hummus, spinach pies, and stuffed grape leaves too.
I've never met an olive or an onion that I didn't like.
