Pizza Night

I didn't plan on it but when I saw my bucket of dough rising and my bucket of eggplant tomato sauce and spinach and Pepper Jack cheese I decided to make a pizza. I greased my cast iron skillet and preheated the oven to 350. I spread the dough in the pan up the sides too. I ladled on the sauce and dropped the baby spinach on top and layered it with spicy Pepper Jack cheese. It was so delicious we ate the whole thing, together. LOVE.
