Economy Hummus

My neighbor who works at Price Rite. When I told her I was having bad luck with buying the dried beans she told me that I should reach to the back of the pile to get the newer ones. Thank you Toni!! I bought a dozen bags of beans and I have made hummus every week since she advised me. Lately, we don't have a budget for sesame tahini and fresh lemons so I am making my economy version of hummus which is equally good. I soak the chick peas before bed or when I wake up, allowing for 8 hours of plumping. Then I put the chic peas in my crock pot with a bloop of olive oil and simmer for a few hours at 250 degrees. When they cool I blend them with natural peanut butter we get at Job Lot. I add salt, cumin, garlic, red chili, and wine vinegar. I blend it all in my food processor.
