Spicy Kale Peanuts Chicken and Grits Supper

The other night I stir fried kale with my freshly roasted peanuts and then I added sliced and chopped frozen chicken breast which defrosted immediately in the hot pan. I added hot rooster and spicy garlic sauce, olive oil, and cheap port wine and a pinch of salt and sugar and soy sauce. I was too impatient to wait for rice so I made a pot of hot grits. It was so good we ate it for a few days. This meal tells the story of places I've lived and who inspired me. Oh I also added chopped candied ginger leftover from Christmas.
