Potato Leek Eggplant Kale Carrot Soup

I just made potato leek eggplant kale carrot soup. I roasted the eggplant. I used chicken stock, home made. It is fabulous. I also made egg noodles. I added slices of our local neighborhood smoke house: Krakow Deli double smoked garlic sausage; three feet for 9 dollars. A bargain.

This daily shoveling is like farm living in the city. The best of all worlds. City plowing and the quiet of snow storms.

The only thing missing is a dairy cow, a chicken, and a goat.
